The Varietal Blend
“Castello Del Sesto” extra virgin olive oil is a sensory experience, where the Sessana, Leccina, and Itrana olives are cultivated with care and deep respect for tradition. These varieties combine to create an oil with a unique character: the delicate fruitiness of the Leccina merges with the green and intense notes of the Sessana, while the Itrana adds a vibrant freshness. Harvesting and Transformation Process
The carefully selected olives are hand-picked before full maturation and pressed within 4 hours of arriving at the mill. After the leaves are removed by a defoliator, the olives are crushed by hammer mills. The resulting paste is processed in the malaxer at 20-26°C for 10-15 minutes, encouraging the separation of the oil, which is then extracted using a decanter. The process, carried out at low temperatures and without adding water, preserves the aromatic qualities of “Castello Del Sesto” oil, which is immediately bottled to maintain its organoleptic and flavor properties over time.
Organoleptic Characteristics
